Greek Yogurt Pancakes

Hello everyone!

No run for me tonight.  I have a (very) minor cold, but I decided it was a sign I should go to bed early tonight.  It’s ok, I had another great run yesterday (5 miles flew by), so thank goodness for these motivating Olympic events!  I don’t know what I’m going to do next week :(

But, on a brighter note, one more day!  Excited for the weekend?

I am excited to relax a little and get healthy, with a little unpacking and celebrating James’s birthday mixed in!  He’s turning the big 2-7 on Monday, so we are celebrating with some friends this weekend.  Hopefully I find my camera battery charger before then, which leads me to…

Pancakes!

My camera charger is packed somewhere, and my battery AND back-up battery have died.  So here’s tonight’s breakfast for dinner recipe, sans an actual picture.

Greek Yogurt Pancakes (adapted from Julie’s recipe):

Ingredients:

1 1/4 cups of oats

8 oz. of 0% plain greek yogurt

2 oz of ricotta cheese

2 eggs

2 t of cinnamon

Optional:  Chocolate chips <– not optional in this house

Directions:

Add all the ingredients, except for the chocolate chips, to a bowl and mix with an immersion blender.

Add chocolate chips and stir into the batter.

Heat pan to med-high heat and make your pancakes.

Enjoy!

These healthy pancakes were awesome for dinner.  James gave them the stamp of approval, which is big considering he was a little worried about them.
