Recent Recipes

Hi everyone!

Hope you had a great Wednesday!  Ours was up and down (pool stuff), but now the three of us our lounging on the couch watching Psych, so it’s all good!

We also had an awesome dinner, so I wanted to highlight that and a couple other recent recipes.

First, the ones that aren’t mine.

Tonight’s dinner was straight out of Fitness magazine.

Chicken parmesan burger with provolone, marinara, and spinach

We followed this recipe exactly, except I used shredded parmesan cheese instead of grated and we grilled the burgers instead of making them on the stove.  We’ve never grilled chicken burgers, and James was skeptical, but these chicken parm burgers were delicious!  So flavorful and juicy!  Highly recommend!

Next, I made these pancake muffins, which is an idea I got from Ashley.

Hers look even better, but these turned out pretty good too!  I used 2 cups of pumpkin pancake mix, 1 1/2 cups of milk, 2 eggs, and a handful of chopped walnuts.  Thanks for the idea Ashley, they were wonderful!  Also, check out Ashley’s page in general, all her recipes look so amazing!

Now, an incredibly easy chicken bake that I came up with a few days ago when I wanted something homemade, but had very little ingredients in the house.

Chicken and Tomato Bake

Ingredients:

- 2 chicken breasts

- 1 can of diced tomatoes

- 1 can of Italian style stewed tomatoes

- 1 cup of panko crumbs

- 1 T of Italian seasoning

- black pepper to taste

- 1/4 to 1/2 cup of shredded parmesan cheese

Directions:

Preheat your oven to 400 degrees.  In a bowl, mix the tomatoes, seasoning, panko, and parmesan cheese in a bowl.  You may have to add additional panko crumbs until all of the liquid from the tomatoes is soaked up.  Place the chicken breasts in a square baking pan and cover with the tomato/panko mixture.  Cover the pan with foil and bake for 20 minutes.  Then, remove the foil and bake for another 10 minutes.  Finally, top the bake with the parmesan cheese and bake for an additional 3-5 minutes until the parm is melted.

Enjoy!

I love this recipe because I always have all these ingredients in my house, even when I haven’t gone grocery shopping, so it’s easy to always get a home cooked meal even with empty cupboards.

Movie Review Monday: The Great Gatsby

I know, I know, it’s Tuesday, not Monday.  But I’m typing this Monday night, so even though it’s getting published Tuesday, so what — Movie Review Monday.

Last week, my co-worker/friend, Staci, and I went to Milwaukee’s Oriental Theatre to see The Great Gatsby.

Before getting to the movie, I have to mention the theatre — I love seeing movies here!  It is so beautiful and historic (it opened in 1927!), and a great landmark for Milwaukee, so it’s always fun to go there.

Now, to the movie.

First of all, let me preface this review by saying that I love the book The Great Gatsby.  I have read it a few times, including semi-recently, and I love everything about it, so I had a soft-spot going into the movie.

That said — I loved it!

Leo and Tobey were absolutely perfect as Gatsby and Nick Carraway.  I’ve always liked Leo, so he was great, but I have never been the biggest Tobey Maguire fan — but that all changed here!  He was awesome, and also hilarious.  The supporting actors were also really good (in particular, Jason Clarke, but I’m super biased because I love him).  I don’t really like the actress who played Daisy, but I also don’t like Daisy, so that was kind of perfect.  Overall, great casting, which is a huge part of the success of any movie.

Also, the movie was really funny.  Tobey was definitely one of the funniest, but in general, there were so many little comments/facial expressions/scenes that had us laughing.  In fact, there was one scene with a clock that had both of us in tears from laughing (although, no one else in the theater was laughing, so I’m not sure if it was really as funny as we thought).

I also loved the imagery — Gatsby and Daisy’s houses were amazing, Tom’s city apartment was EXACTLY what I pictured in the book, and Gatsby’s parties were pretty awesome.

Finally, this is a personal preference, but I absolutely love the 1920′s.  The era seemed to fun and over-the-top and indulgent, and this movie captured that essence perfectly!

I’ve seen mixed reviews on this one, but I thoroughly enjoyed it, and I thought it moved along nicely.  I HATE long movies, and this was over two hours, but I never hoped that it would end soon, which is saying a lot.  This version may not be for everyone, but I highly recommend it!

Weekend Recap in Pictures

Hope you had a wonderful weekend!!  It was BEAUTIFUL here, which was perfect for the yard work that went on.

James’s dad and grandpa came into town to help James with some work around the house, and they did a great job!  They got so much done, and I know James loved having the help and the company.  So without further ado, here are some pics from the weekend’s projects:

It was a great weekend, as it always is when family is around!  James’s two sisters staying overnight Saturday as well, and we enjoyed a grilling feast.  It was definitely a wonderful time!

A Few Things For Friday

Good morning!

Here is my typical Thursday Tangents post, but in Friday form because last night, instead of posting, I had dinner with two fabulous people (see below) and watched some excellent television (see below).  Here we go…

1.  Book Club dinner last night was ah-mah-zing, Penny Hartz-style.  I met up with Brittney and Alysha to discuss When In Doubt, Add Butter at Thai-namite.  Sushi galore and it was wonderful.  Plus, some post-dinner fro yo?  Obv! (no pic though)

2.  The Office ended last night :(  I haven’t been a huge fan since Michael Scott left, but it’s still The Office, and I still watched every episode.  There were definitely some tears.

3. Fridays are my favorite workout days.  Why?  James does BodyPump with me!  It’s fun to get some extra time together this morning since I typically leave the house before he even wakes up so I can hit the gym.

4.  Speaking of extra time together, we did get some yesterday.  The weather this week has been beautiful, so I decided to forego the gym and run outside.  I got in 9 miles before 7 a.m., and I was able to have breakfast with James and snuggle a bit with Milo.  Win, win, always!

5. Why did I run 9 miles?  Because I can’t stop eating these:

My mom gave me a bunch of these insanely, ridiculously delicious cookies last weekend, and I am addicted.  There is vanilla bean flavoring in them (I think that’s what is it) that must be laced with something because so so so good!

6. I also may have had this for dinner on Wednesday night.

7.  But the miles were awesome because?  New shoes!

8.  We finally have a weekend at home!  I haven’t been home in the last five weekends (that’s A LOT of time away from Milo), but this weekend, I will be in my house, snuggling with my pup.  Also doing some pool and yard related errands, but I’ll take it :)

When in Doubt, Add Butter

How awesome is that for a title of a book?  AND, how great is this cover:

This is the book Brittney, Alysha, and I read for our book club, which we are meeting to discuss tomorrow.  I’ve had multiple people tell me the cover alone made them want to read this book, and in this case, it’s perfect fine to judge a book by it’s cover!  Without further ado…

When in Doubt, Add Butter

Here is the description from goodreads.com:

“As far as Gemma is concerned, her days of dating are over. In fact, it’s her job to cater other peoples’ dates, and that’s just fine by her. At thirty-seven, she has her own business, working as a private chef, and her life feels full and secure. She’s got six steady clients that keep her hands full.

There’s Lex, the fussy but fabulous department store owner who loves Oysters Rockefeller and 1950s comfort food; Willa, who needs to lose weight under doctor’s orders but still believes butter makes everything better; a colorful family who may or may not be part of the Russian mob; an überwealthy Georgetown family; the picture-perfect Van Houghtens, whose matriarch is “allergic to everything”; and finally, a man she calls “Mr. Tuesday,” whom she has never met but who she is strangely drawn to.

As you can tell from the description, this would be considered chick lit.  I typically don’t go for chick lit, but I loved this book!  I thought the main character was interesting and I liked her, so it was easy to root for her.  I also loved that the book was about cooking and wasn’t always about her love life — her work life crept in quite a bit, too.

This book was incredibly easy to read, which actually made me sad because I flew through it.  This is one of those books where you just really like the characters and want to hang out with them, not fly through the book and be done with them.  It was also so nice to not really think during this book!  I’m all for deep and meaningful books, but I’m all for fun and lighthearted, which this definitely was.

My only two problems were that it was a bit predictable (I saw the big reveal from miles away, but I wanted it to happen, so I was not at all upset) and that there wasn’t quite enough about her cooking and her clients.  She had some super weird and crazy clients, and I would have liked to see more interaction with them, along with more info about what she cooked for them, especially for the people with ridiculous food requirements.

But overall, I loved this book.  It was fun to read, definitely kept my attention, and I feel like the book is just like the cover — colorful, fun, and draws you in.  I definitely recommend this for a summer read!

Peanut Tofu Stir Fry

Hi all!

I’m back tonight with another recipe, but first did you watch How I Met Your Mother?  We met the mother!!  It only took 8 years :)

Back to the food.  I typically don’t like to post recipes on two back-to-back days because I like to switch it up, but this one was too good to pass up!  Don’t worry, the remainder of the week includes a book review and some random tidbits.  Within the next few weeks, I’m hoping to get quite a few more wedding posts going.  Lots of updates!

But for now, I want to share this delicious, Asian-inspired meal with you.  Be back tomorrow with When in Doubt, and soon with wedding posts!  Night!

Peanut Tofu Stir Fry

Ingredients:

- 1 yellow onion, diced

- 2 cups of sugar snap peas

- 1 block of extra firm tofu, chopped

- 1 T olive oil

- 1/3 c peanut butter, plus a small spoonful (<– I do this because I like PB more than soy sauce, so I want to make sure it tastes more peanut butter-y than soy saucy)

- 1/3 cup soy sauce

- 1 tsp red pepper flakes

- 1/4 cup of peanuts

- 1 cup of cooked brown rice (note: I used quinoa because that was ALL I had in the house)

Directions:

In a skillet, heat the olive oil over medium-high heat and add the onions and sugar snap peas.  Cook for about 7 minutes, or until soft.  Add the tofu and cook for an additional 7 minutes.

While that cooks in the skillet, mix the peanut butter, soy sauce, and red pepper flakes in a bowl.  After the tofu begins to brown, at the peanuts and rice (or quinoa) to the skillet and thoroughly combine.  Pour the PB/soy sauce mixture into the skillet and mix until the ingredients are coated. Enjoy!

 

 

Easy Taco Skillet

Hi everyone!

Thanks for your incredibly kind words about my grandma.  She passed away on Christmas Eve, so last weekend’s memorial really was about a celebration, but it’s always so nice to get support.  My family definitely appreciates all your thoughts and prayers.  You’re the best!

Tonight, I have to share a recipe that I came up with last week that was a huge hit with James and made excellent leftovers, which is always a plus!  Hope you like it!

Easy Taco Skillet

Ingredients:

- 1 yellow onion, diced

- 1 bell pepper, diced (I used four mini sweet peppers because that was what I had)

- 1 pound of lean ground beef

- 1 can of black beans, drained

- 1 can of sweet corn, drained

- 1 can of diced tomatoes with chiles, drained

- 1 lime

- 1 packet of taco seasoning

- 1 bag of spinach

- 1 jar of salsa (I used medium)

- handful of cilantro

- 1 cup of mexican blend cheese

- 0% plain greek yogurt (for topping)

- 1 avocado, diced (for topping)

I know it sounds like a lot of ingredients, but trust me, most of this is stuff you probably always have, and it’s super easy!  Just look…

Directions:

In a skillet, heat the onion and peppers in a tablespoon of olive oil over medium-high heat for 5-8 minutes until soft.

Remove from heat and place into a bowl.  Add the hamburger to the now empty skillet and brown over medium heat.  While the meat is browning,  add the black beans, corn, and diced tomatoes to the bowl with the onions and peppers.  Add the taco seasoning and the juice from one lime to the bowl and combine (note, this alone makes an excellent salsa).

Once the hamburger is browned, add the vegetable mixture from the bowl and the jar of salsa to the skillet with the beef and combine.  Heat over medium heat until the mixture is warm all the way through.  Add the spinach and stir until wilted and combined.  Add the handful of cilantro and combine.

Turn the heat off and top the mixture with the cheese.  Cover and let sit until the cheese is melted.  Top each serving with a dollop of plain greek yogurt and diced avocado.

And there you have an incredibly easy and oh so delicious taco skillet, loaded with plenty of vegetables and taco flavoring.  Enjoy!

A Weekend in Indiana

Hi everyone!

I’m back from another family weekend!  As I’ve mentioned a few times, I absolutely love spending time with my family, so it was so great to see my parents, sister, and some extended family this weekend.

Unfortunately, the reason for heading home was for a memorial service for my grandma, but it was a happy occasion celebrating her 80 years of life, and my mom did a great job organizing a day to remember her.

While I was home, we also spent some time outside.  James and I got in a run (8 miles) on Saturday, and my parents, sister, James, and I walked the neighborhood today for a little post-Mother’s Day brunch exercise, so it was great to get out and enjoy my parents’ beautiful neighborhood and the yard my mom has worked so hard on.

I also spent some time with my cat, Rae, while I was home.  I got Rae when I was 12 (she will be 15 in August!), and she is the sweetest! Love seeing her.

Finally, Happy Mother’s Day to the best home in the world!  My mom is my best friend, and I am SO blessed to have such an amazing relationship with her.  We talk at least once  a day, and every time I see her, it’s the greatest day :)

To celebrate, I brought her some cookies from Sciortino’s Bakery in Milwaukee because she loves their Italian cookies.  We definitely went through a few of these this weekend.

Overall, it was a good weekend celebrating my grandma and spending time with my family.  Being home is like a mini vacation and it’s always so hard to leave, but I’m looking forward to them coming to visit here soon!

Thursday Tangents

Hi everyone!

It’s that time again — I have random things on my mind, so here we go with Thursday Tangents:

1.  Look at my sleepy boy!

 

I need to start a post with him because he’s the best.

2.  The weather has been beautiful lately!  Not only did I walk with a co-worker to get some fro yo at lunch yesterday, but James and I have been sleeping with the window open at night, and I love it!  I love the breeze and walking up to the chirping birds.  Love!

3.  I finished this book last night:

Alysha, Brittney, and I are meeting for dinner to discuss it next week, but I’ll probably post a review beforehand.  Spoiler — I enjoyed it!

4. I’ve been indulging a bit lately after work.  First with a glass of this:

Looks kind of gross, but it’s my microwave brownie!  Except I microwaved it for only 30 seconds because  I preferred brownie batter last night :)

Getting rsvps back for the wedding is pretty awesome, plus we get mail everyday!

6.  James did BodyPump last week!  It was tough, but he’s coming back!  So excited to workout together in the mornings again!

7.  I scheduled the pool opening!  Can. Not. Wait.

Root Beer Pulled Pork

Ready for the pulled pork recipe I promised?  Of course you are!

Back in law school, I really wanted to incorporate root beer into my pulled pork and my mom gave me a crock pot cookbook with a version that I have adapted into my own.  And it’s amazing!

Root Beer Pulled Pork:

Ingredients:

- 1 pork shoulder (I used a 2-pounder for James and I)

- 1 2 liter of Root Beer

- 1 yellow onion, cut into thick pieces

- 1 16 oz bottle of your favorite BBQ sauce

- 1 clove of garlic, minced

- salt, pepper, and cumin to your liking

- Whole wheat sandwich buns

- Sweet pickle slices

Directions:

Add the onion, garlic, pork shoulder, and spices to the crock pot.  Add 1 and 1/2 cups of root beer and 1/2 cup of the BBQ sauce to the crock pot and cook on low for 8 hours.

When the shoulder is almost done cooking, heat another 1 and 1/2 cups of root beer and 2 cups of BBQ sauce over medium heat in a skillet.  Stir until the ingredients are combined and the sauce thickens (about 15-20 minutes).  Preheat your oven to 375 degrees.  Place your buns on a baking sheet and bake for about 5 minutes until toasted.

Remove the pork shoulder from the crock pot and drain the liquid.  Add the shoulder back to the crock pot and shred the meat, removing the fatty portions and the bones.  Once the meat is shredded, dump the skillet of sauce over the meat and combine.

Add to your sandwich buns and top with additional BBQ sauce and pickles.  Enjoy with your side of choice (I recommend sweet potato friesroasted brussel sprouts or kale chips).

This is insanely, crazy delicious.  Keep in mind, pulled pork is my favorite food, but I would seriously eat this everyday.  LOVE it!
