Hello everyone! I’m back after a weekend off celebrating my best friend’s wedding! I’m going to recap the wedding tomorrow (waiting to get some pics), but tonight I want to highlight our amazing dinner!
It was full of my favorite fall flavors!
First, I made one of my absolute favorite pizzas — butternut squash, apple, spinach, red onions, goat cheese, and ricotta cheese.
I found the recipe on Julie’s blog and followed it almost exactly except that I roasted the honeycrisp apple with the squash and red onions, and I added ricotta cheese to the crust before topping it with spinach, the roasted veggies and apples, and goat cheese.
This pizza is fall on a plate and I LOVE it!
Making this pizza reminded me of another one of Julie’s recipes — two-ingredient pumpkin cookies using these ingredients.
I used the same two ingredients, but added pumpkin pie spice to the top of them before baking them. I used to make the cream cheese frosting with these, but decided not to this time. And they were amazing anyway.
I made the cookies for James, but I was craving dessert of the ice cream variety, so I had one of these:
And, of course, topped it with some caramel sauce.
Such a good night of eats! I absolutely love fall flavors, and honeycrisp apples, butternut squash, and pumpkin are the best!
Now I’m full and happy, so I’m off to read a bit with Milo Bear.

That pizza looks fantastic! I’ve been seeing it all over the place, and I’m dying to try it, but I don’t think my husband will eat it

I’ve made 2 ingredient pumpkin cupcakes with those same two ingredients. They were so good!

I was super lazy so I bought a pre-made Boboli thin crust, but it was really good!
They are quite tasty
