Lazy Rainy Day

Six miles down!  Only 10.1 left before the big day on Saturday.  It’s crazy that it has gone so fast!  I’m super excited for Saturday.  No matter what, our goal is just to finish and finish together.  5 days!

Going back to yesterday afternoon, it was a dreary rainy day, so most of the day was spent like this:

The Book Thief










I finished this (review coming soon) and decided to reread The Great Gatsby.  I don’t remember when I read this originally (I think sophomore year of college?), but it’s been so long and the movie is coming out in December, so I wanted to read it again.

Also, after reading the Paris Wife (which I LOVED!), I learned a little more about F. Scott Fitzgerald and wanted to reread his work knowing some of his background.

After reading and cuddling with Milo, I made a late lunch as nourishment for our run (since we ran around 7:45pm).  Did my last recipe convince you to try gnocchi?  If not, maybe this one will.

Seriously, gnocchi is so easy because it cooks so fast, and it’s a blank canvas for ingredients.  Yesterday’s dish included gnocchi, veggies, and some chicken sausage.  The perfect combo of carbs, proteins, and vitamins.

Gnocchi with Zucchini, Squash, and Chicken Sausage

1 package of gnocchi

2 T of olive oil

1 zucchini, diced

1 yellow squash, diced

1 15 oz can of diced tomatoes with onions and peppers

2 chicken sausages, diced (I used Johnsonville’s Three-Cheese Italian style)

1 tsp of oregano


Black pepper to taste

A handful of parmesan cheese (shredded or shaved — not grated)

Cook gnocchi in boiling water according to package (about 2-3 minutes).  In a saucepan, sauté the diced zucchini, squash, and chicken sausage in the olive oil over medium heat for 6-7 minutes.  Add the diced tomatoes and cook until the tomatoes are heated through.  Drain the gnocchi and add to the saucepan with the veggies and sausage.  Add the oregano, pepper, and parmesan cheese.  Combine and serve.  Enjoy!

  2. Yum your meal sounds delicious! I love using chicken sausage in meals … so fast, easy, and tasty!

      I JUST discovered chicken sausage and used it for the first time last night…and again today haha :) Also, I said almost that exact same thing tonight that it is so fast, easy, and so good!

  3. I read the Great Gatsby back in high school too… but it would be fun and I am sure much more enjoyable to read again! I am looking forward to the review on the book thief, I have been wondering about it!
    Nice recipe too!

  4. I had gnocchi last night! it is so delicious. it is comforting and hearty but something about it makes me think it is healthier than just pasta.
