Hi everyone and Happy Monday!
I’m not as tired as usual this morning, so here’s hoping that lasts all week!
Much like Saturday, our Sunday was pretty uneventful. It consisted of working, watching some football (I had a terrible week in Fantasy Football), and so grocery shopping.
As you know, although I hate the actual act of grocery shopping, I love LOVE having groceries in the house. Last night, I prepped some fun snack for lunch today, I have a great dinner planned, and we had a simple, delicious dinner yesterday.
I made Courtney’s BBQ Garbage Bread, using ground beef instead of ground chicken because I didn’t feel like defrosting the chicken last night.
I also made super easy squash — I diced it, sautéed it on the stove with a little olive oil for about 8 minutes, then added a pinch of salt, black pepper, and [more than a pinch of] parmesan cheese until it was all melted together.
I also tried a new-to-me snack for dessert. Healthy Choice apparently makes frozen greek yogurt, so I grabbed the vanilla bean flavor. So so good! It was rich, creamy, and absolutely delicious.
I only got this frozen yogurt originally as in impulse buy to use of the rest of the caramel sauce from TJ’s, so of course, I added that on top.
I finished the night by watching a sneak peek of the new show “The Mindy Project.”
Disclaimer, I absolutely love Mindy Kaling, so I knew I would like this show, but I really liked it. I’m excited to watch the whole season.
Well, off to work. Can’t wait til lunch for some snacks! Have a great week!
