Sunny Saturday

Yesterday was the perfect relaxing Saturday.  The only thing that would have made it better would be a pool :)

After yesterday’s post, I did get in a run.  It was too hot to go outside, so I was stuck in the apartment gym (which was so HOT), but it was nice to get moving.

After running, I did plenty of laundry, but then sat outside on our balcony enjoying the sun.

But really, I spent most of my time on the phone with my parents, hanging out with Milo, and chatting with James through the screen door (he was working at the dining room table).

After I enjoyed a few hours in the sunshine, we made a wonderful summer dinner — hamburgers and brussel sprouts.

Brussel sprouts are one of those foods — like kale — that I never thought I would like (James, too), but love them!  I sprinkled the sprouts with olive oil, salt, and pepper and roasted in the oven at 425 for 13 minutes.  Then I sprinkled them with parm cheese and put them back in the oven for 2 more minutes.  Super simple and good!

The burgers were great – I mixed black pepper, red pepper flakes, oregano, basil, onion powder, and about 4 tablespoons of Worcester sauce into the hamburger, then James grilled.  I topped mine with mozarella cheese, tomatoes, and spinach (I could eat only one and a 1/3 though).

After dinner, I wanted to watch another movie, but James had to work some more, so I picked E.T. because he has already seen it, and shockingly, I never have.  He watched a bit from the table while he worked, but he didn’t have to focus too much.

I can’t believe I’ve never seen E.T.  I’ve seen so many movies, but never that one.  It was so good!  Little E.T, and of course Elliot and Gertie, were super adorable.  Such a great movie!

Well, now I’m having a quick breakfast snack, then James and I are going for a run.

  1. I am the biggest brussel sprouts fan. I love them roasted. My mom actually made brussel sprouts chips by roasting all the individual leaves broken apart. So good! I am in love with vegetables so really have gotten my groove down with them. haha.

  2. I’ve actually never tried brussel sprouts – I guess it’s because of all the horror stories I heard when I was younger!

  3. I was the same way about brussels sprouts – never in a million years did I think I’d ever try them (much less like them) and now I love ‘em! Kale too!

  5. Milo is just the cutest!! He looks like he is having so much fun in the sun!
    I dont remember ever having a brussel sprout before and they scare me. Should I take the plunge and try them?? I’m nervous!!!
