Using the Oven = Not the Best Idea

Hello everyone!

I hope you had a great Monday and hopefully you have a short week, too!  I have Wednesday off and I’m taking a half day tomorrow so James and I can head to the Brewers games, so this should be a good, short week!

My week started off this morning with a great, eclectic run.  I was up bright and early and on the treadmill by 5:40 a.m.; however, it was Monday morning sooo….my energy was pretty nonexistent.  So I did a little bit of everything to keep things interesting.

I started off with a steady run for 20 minutes, then slowed down to uphill walking for 8 minutes, then HITT (30 seconds at 8.0 and 30 seconds at 4.0 3x, then 20 seconds at 9.0 and 40 seconds at 4.0 4x, then back to the 8.0 HITT 3x), then I cooled down for 2 minutes for a 40 minute running workout.

It was super random, but I recommend it on those days you can’t get motivated — it made time go quickly and it was a great workout.

After work today, James and I went grocery shopping for the first time in a long time, so we finally have food in the house!  Unfortunately, it took much longer than I expected (Monday nights after work are the WORST for grocery shopping), and I lost track of time, so unfortunately, I couldn’t get over to my friend’s house to watch the Bachelorette (don’t worry, I’m watching it here), so I decided to do some baking.

Dumb dumb idea.  It is 90 degrees out!  Why would I turn on the oven?

So it wasn’t the brightest idea I have ever had for summer, but I am super happy with the results.

First, I made a batch of my June Foodie Pen Pal‘s Strawberry Shortcake Cookies.

These things are friggin amazing!  I love them!  They really are the perfect summer cookie.  I think hers turned out a little better than mine, but the recipe is phenomenal!  I’ll let her decide if she wants to give it out :)

After the cookies–because I wasn’t ready to turn the over off apparently–I made some baked Sweet Potato Wedges.

Baking in the oven

These turned out great and they were so so easy!

Baked Sweet Potato Wedges

 

2 large sweet potatoes

4 T of extra virgin olive oil

2 tsp of salt

2 tsp of black pepper

1 T of chili powder  (<– this reminds me of Breaking Bad…anyone?)

 

 

Directions:

– Pre-heat oven to 485 degrees

– Cut the potatoes into thin strips/wedges

– In a bowl, toss the potatoes with the oil and seasoning

– spread evenly on a baking sheet and bake for 15 minutes

– Turn the potatoes and bake them for another 10-13 minutes

– Let them cool and enjoy!

 

 

Well, I have to watch the end of the Bachelorette (I love everyone’s families, and Sean’s dogs?  Are you kidding me?  I would marry him on the spot if he introduced me to his “girls.”  So cute!).

  8. ha! Your post title alone made me laugh. Paul always thinks I’m weird b/c I get so hot in the bathroom…its the lights I swear!! Good thing its not hot in Seattle right now! :)

  9. I always use the oven when it’s hot. I try not to, but it just happens! BTW, the bachelorette didn’t tape on my dvr this week. I have no idea who went home.

  11. hahah I love it! Of course everyone can have the recipe, I actually got it from Martha Stewart! The version I posted weren’t as pretty as the ones I made you or even the ones you made!

    That’s because I used partly frozen local strawberries so they were a lot more pink but still delicious! Here’s the recipe, hope everyone makes them they are awesome!
